This is a good idea I haven’t seen spelled out before.

I wouldn’t do it every day but it is something you can put into practice a few times a week and use it to both get to know your customers as well as keep a better eye on your business and the quality of work coming from the kitchen and the servers.

I tend to agree with this article. It is never too soon to start the marketing process for your new place. If you are working on starting a bar or launching a restaurant, you need to start your marketing early. Step one is identifying your market. Segmenting Your Restaurant Customers to Improve Your Marketing Results

Unless you are selling water in the middle of the Sahara Dessert, your customer profile isn’t “everyone”.
